Three issues with pineapple vacuum freeze-drying equipment
1. Question: What is the core process principle of pineapple vacuum freeze-drying? What are the significant advantages compared to traditional drying?
Answer: Pineapple vacuum freeze-drying technology involves freezing fresh pineapples in an ultra-low temperature environment of -30 ℃ to -50 ℃, causing the internal moisture to condense into solid ice crystals; Subsequently, the temperature gradually rises in a vacuum oxygen deficient environment, allowing the ice crystals to sublime directly into water vapor without passing through the liquid state and be captured by a cold trap, ultimately removing over 95% of the water. This low-temperature sublimation process can preserve the color, natural aroma, and heat sensitive nutrients (such as high retention rate of vitamin C) of pineapple to the greatest extent possible. After drying, the pineapple has a fluffy and porous sponge like structure, with a basically unchanged volume and excellent rehydration ability. Adding water can restore freshness in a few seconds, and it is also easy to store and transport at room temperature for a long time.
2. Question: How to effectively solve the problem of astringency and maintain a crispy texture during the pre-processing stage of pineapple freeze-drying?
Answer: Fresh pineapple contains bromelain, and direct freeze-drying can easily produce a bitter taste. After slicing, pineapple chunks need to be soaked in a specific concentration of sodium chloride (saline) solution for pretreatment. This not only effectively inactivates proteases and reduces astringency, but also further highlights the inherent sweetness of pineapple. At the same time, air drying is required after pretreatment to remove excess surface moisture. During the freezing stage, it is necessary to use rapid freezing and freshness locking techniques (such as freezing to below -30 ℃) to quickly form fine ice crystals from the water, avoiding large ice crystals from puncturing the cell wall, thus ensuring that the freeze-dried pineapple chunks have intact tissue and a crispy taste.
3. Question: How to avoid product collapse, melting, or excessively long freeze-drying cycles during the vacuum sublimation drying process of pineapple?
Answer: The core of preventing collapse and melting lies in precise temperature control. The heating temperature of the shelf during the sublimation stage must be strictly controlled below the eutectic point (collapse temperature) of pineapple (usually 5-10 ℃ lower) to avoid local melting or structural collapse caused by rapid heating. If the freeze-drying cycle is too long or the moisture content of the finished product is high, it can be improved by optimizing the pre-treatment: for example, reducing the thickness of the cut to increase the surface area, optimizing the salt water soaking formula, or adding an appropriate amount of freeze-drying protectants (such as sucrose, mannitol and other excipients) when necessary to form a loose skeleton, thereby improving sublimation efficiency and shortening the overall freeze-drying time.
