Three important technical issues for dried passion jelly
1. Pre freezing speed and ice crystal morphology control
Passion fruit pulp has a high water content, high sugar and pectin content. If the pre freezing stage is not fully frozen or the ice crystals are too large, it is easy to break through the cell structure. After freeze-drying, problems such as messy pores, fragility and powder loss, and soft and rotten after rehydration may occur.
The technical key points are: the pre freezing temperature usually needs to be lower than the eutectic point of the material to ensure that the fruit pulp is completely frozen as a whole; Simultaneously controlling the freezing rate to make the ice crystals small and uniform, reducing cell damage, and preserving a loose and stable skeletal structure for subsequent sublimation drying.
2. Freeze drying curve setting: avoid collapse, cracking, and flavor loss
Passion fruit is rich in aromatic substances, but its high sugar and pectin content make it more prone to surface melting, collapse, and clumping during the sublimation stage.
The sublimation drying stage requires maintaining a stable vacuum degree, and the material temperature should not be too high, otherwise the ice crystals may melt first and then evaporate, leading to structural collapse; During the drying stage, it is necessary to gradually increase the temperature to remove bound water. However, if the temperature is too fast or too high, it may cause excessive drying, loss of aroma, or local coking.
Therefore, the temperature of the partition, the pressure inside the compartment, the heating rate, and the drying time need to be matched, and cannot be simply "high-temperature fast drying".
3. Control of final moisture content, moisture absorption, and packaging stability
The moisture content of freeze-dried passion fruit products usually needs to be controlled at a low level, with a common target of around 1% -5%; If the moisture content is too high, it may soften and become damp again, while if it is too low, it may become too brittle and easily break into powder.
Due to the porous structure of the freeze-dried material, it is highly susceptible to moisture absorption. The processes of discharging, crushing, screening, and packaging all need to be quickly completed in a low humidity environment, and are packaged in aluminum foil bags, nitrogen filled, or vacuum sealed to avoid aroma loss and moisture regain.
This is also an important step in judging the quality of freeze-dried passion fruit: high-quality products should be crispy, have a natural color, and have a stable shape after rehydration, rather than quickly gelatinizing or appearing cloudy and precipitated when in contact with water.
