Three precautions for the taste of fried banana slices

2026-09-04

1. Question: Why don't the banana slices I fry taste crispy enough, and even soft and sticky?
Answer: This is usually related to the selection of banana maturity and oil temperature control. If overripe bananas are used, their internal moisture and sugar content will be too high, making them prone to softening and rotting during frying; In addition, if the oil temperature is too low, the surface of banana slices cannot quickly form a dense shell, which can lead to a large amount of oil absorption, resulting in greasy and soft finished products. To achieve a crispy texture, you should choose bananas that are about 70-80% ripe (with golden skin and a small amount of black spots), and strictly control the oil temperature between 160 ℃ -170 ℃ to quickly dehydrate and shape them.
2. Question: The fried banana slices are crispy right out of the pot, but they soften after a while. How can we maintain a long-lasting crispy texture?
Answer: The softening of banana slices is mainly due to the release of residual moisture inside after cooling. To solve this problem, first the slice thickness needs to be uniform (recommended 1-5 millimeters), ensuring that the internal moisture can be completely blown through; Secondly, it is strongly recommended to use the "re frying" process, which involves raising the oil temperature to around 180 ℃ and quickly re frying for 30 seconds to 1 minute after the initial frying is set and removed. This can force out excess oil and greatly improve the brittleness of the shell. Finally, after frying, it must be placed on a filter or baking net to cool thoroughly. Do not directly put it into a sealed bag before it has cooled completely.
3. Question: Sometimes, fried banana slices may appear "burnt on the outside and raw on the inside" or have a hard texture. How can we avoid this?
Answer: External coking and internal growth are usually caused by high oil temperature (over 180 ℃) or thick slices, resulting in rapid coking of the outer shell while the internal moisture has not evaporated yet; If the taste is hard, it may be due to the bananas being too raw (high starch content) or frying for too long, resulting in complete loss of moisture. The correct approach is to choose bananas with moderate maturity, slice them thinly, and put them in batches in the pot. Keep the heat low throughout the process (160 ℃ -170 ℃), fry until the surface presents a uniform golden color, and then remove them. Use the remaining temperature to make the inside fully ripe, dry, and crispy.
