Three precautions for the taste of dried orange
1. The slice thickness should be uniform, and pre-processing should reduce bitterness
The first step in determining the taste of dried oranges is to slice them. When the thickness is uneven, thin ones are prone to being crispy and hard, while thick ones are prone to drying out on the outside and getting wet on the inside, becoming sticky and even damp.
It is recommended to cut into evenly thin slices of about 3-5 millimeters, remove the seeds, and try to make each slice consistent in size.
If dried with skin, the white flesh will bring obvious bitterness, especially after drying, the bitterness will be more concentrated; If you want to eat it directly, it is best to reduce the thickness of the white flesh, or treat it with light salt water, lemon water, or sugar water for a short period of time to reduce bitterness.
2. Low temperature slow drying to avoid "hard on the outside and wet on the inside" and aroma loss
Oranges contain sugar, acid, and volatile aroma compounds. If the temperature is too high, it is easy for the surface to crust, the aroma to be lost, and even a burnt and bitter taste to appear.
It is recommended to dry at a low temperature of 50-70 ℃ for home drying, and flip it multiple times in the middle to allow the hot air to pass evenly.
Do not use high temperature to dry vigorously at the beginning, otherwise the outer skin will harden first, the internal moisture will not come out, and the taste will become woody, tough, or the center will become sticky. Moisture removal is also crucial. When the environmental humidity is high, the drying time should be appropriately extended to avoid sourness and stickiness caused by stuffiness.
3. Control the endpoint moisture and soften it if necessary
The taste of dried orange depends on how dry it is.
Want to be crispy: When baked until broken, it is crisp, non sticky, and has no obvious soft center.
Want to be flexible and chewy: Bake until the surface is not sticky, the edges are slightly dry, and there is still some elasticity in the center.
Do not seal immediately after baking, let it cool completely first. If some slices are found to be too dry and some are too soft, they can be placed in a sealed container for half a day to a day to allow the moisture to re balance and the taste to be more uniform.
