Three precautions for seaweed drying production line
Question 1: How to accurately control the gradient heating and dehumidification rhythm to prevent "external dryness and internal wetness" or browning?
Process pain points: The initial moisture content of seaweed is as high as 75%~94%, and it is rich in components such as alginate and mannitol. If the temperature is too high or the moisture is not drained in a timely manner in the early stage, it is easy to cause the surface gum to melt and crust, which hinders the outward diffusion of internal moisture and forms a "sandwich"; At the same time, high temperature and high humidity environments can cause enzymatic browning, resulting in blackening of finished products and nutrient degradation.
Key points of operation technology:
Gradient temperature control: A three-stage process of "low-temperature color determination - medium temperature dehumidification - waste heat collection and drying" must be adopted. The temperature in the front section (color fixing zone) should be controlled at 50-60 ℃, combined with strong winds to quickly remove surface free water and lock in chlorophyll; Maintain the temperature in the middle section (main area) at 55-65 ℃, with a focus on removing intracellular bound water; The temperature in the later stage can be appropriately increased to 70-80 ℃ to accelerate drying, but it is strictly prohibited to exceed 80 ℃ throughout the process to prevent the loss of polysaccharides and iodine elements.
Dynamic dehumidification: During the initial stage of drying, there is a significant amount of moisture, and it is necessary to close the return air valve to continuously and forcefully expel the moisture; After entering the medium temperature stage, it is necessary to dynamically adjust the opening of the inlet and return air valves based on the relative humidity of the dehumidification outlet (usually controlled at 40%~55%) to ensure that the drying medium always maintains strong moisture carrying capacity and prevents yellowing and deterioration.
🥬 Question 2: What are the key parameters of the fabric and anti sticking process, and how can we avoid clogging and uneven drying of the mesh belt?
Process pain points: The surface of fresh seaweed is smooth and has viscoelasticity. If the fabric is uneven or the thickness is out of control, it will cause the penetration of hot air to be obstructed, and the underlying material will deteriorate due to lack of oxygen; In the later stage of drying, seaweed loses water and shrinks, making it easy to block the mesh or adhere to the equipment cylinder wall, which affects continuous production.
Key points of operation technology:
Thin and uniform fabric: Whether it is a mesh belt or a drying tray, the thickness of the material layer should be strictly controlled within 15-25mm (microwave dehydration can be relaxed to 3-6cm). Thick paving can lead to excessive wind resistance and yellowing of the bottom layer; If it is too thin, the wind resistance will be too low, causing a short circuit of hot air and reducing the utilization rate of heat energy.
Anti stick and anti pinch shaft: In response to the high viscosity of seaweed, the front end of the mesh belt equipment needs to be equipped with a vibrating or star shaped feeder, and a slight vibration striking device should be installed in the drying stage to assist in separating the material from the mesh belt; If blade or drum equipment is used, it must be confirmed that it has special structures for anti pinch shafts and anti stick walls for high moisture and viscous materials.
💧 Question 3: How to operate the discharge cooling and later storage to prevent "moisture regain and agglomeration" and salt analysis?
Process pain point: Seaweed (especially salted and desalinated products) has extremely strong hygroscopicity. If directly packaged after drying, the residual temperature will condense into water inside the packaging, causing the finished product to quickly regain moisture and mold; If the desalination is not thorough in the early stage, it is highly likely to result in the precipitation of white frost (mannitol or salt crystals) on the surface in the later stage.
Key points of operation technology:
Forced cooling and instant sealing: Dried seaweed must be connected to purified cold air and forced to cool to room temperature before packaging. It is strictly prohibited to seal hot materials directly. The moisture content of the finished product should be stably controlled at the storage standard moisture level of 8%~12% (food grade) or 10%~13% (feed grade).
Environmental control: The packaging workshop must be kept dry (relative humidity ≤ 60%). Due to the high salt content of seaweed, it must be stored away from the ground and walls, and separately partitioned to avoid moisture spreading and infecting other materials; During the rainy season, it is necessary to increase the frequency of box opening inspections. Once moisture absorbing lumps are found, they should be promptly spread out and re dried at low temperatures.
