Three precautions for frying potato chips
1. The reducing sugar in the raw materials should be low, and the slice thickness should be uniform
Potato raw materials directly affect color, oil content, and yield. Priority should be given to varieties with high starch content and low reducing sugar, and reducing sugar should generally be controlled below 0.3%.
The storage and transportation temperature after storage should not be lower than 6 ℃. Raw materials that have been stored at low temperatures should be reheated at 12-15 ℃ before processing to avoid high levels of reducing sugar that may cause deep color after frying.
The slice thickness should be stable, and the common thickness of fresh sliced potato chips is in the range of 1.0-1.8mm, which needs to be verified according to product positioning.
After slicing, it is necessary to rinse, blanch or protect the color in a timely manner to reduce surface starch and precursor substances, reduce browning and acrylamide generation.
2. The oil temperature and time should be controlled to avoid colors that are too dark
The frying temperature is usually controlled between 165-185 ℃, depending on the slice thickness, dehydration effect, and mesh belt speed.
The temperature is too low, the potato chips have high oil content and a non crispy taste; If the temperature is too high or the time is too long, it is easy to burn, the color will darken, and the risk of acrylamide will also increase.
Control points:
It is advisable to use a light golden color at the end of frying to avoid frying to a deep brown color.
The feeding amount should be uniform to avoid excessive fluctuations in oil temperature.
When the thickness of the slices varies, there may be uneven color and increased debris in the same batch.
After frying, the oil should be removed in a timely manner to reduce surface floating oil.
3. Oil quality should be continuously managed, and cooling packaging should be moisture-proof and oxidation resistant
Frying oil needs to be regularly tested for acid value, peroxide value, and polar components, and the residue should be filtered continuously or periodically.
The debris at the bottom of the oil pot must be removed in a timely manner, otherwise repeated coking will produce odors and affect the color of the finished product.
Attention to follow-up steps:
After frying, the moisture content of potato chips usually needs to be reduced to a lower level, with a common target of around 1.5% -2.5%, to ensure crispness.
After seasoning, it should be fully cooled to near room temperature before packaging to avoid condensation and softening inside the bag.
It is recommended to use nitrogen filled or high barrier materials for packaging to reduce the risk of oil oxidation and breakage.
