Three precautions for vacuum freeze-drying of banana powder

2026-10-20

Question 1: How to prevent bananas from turning black and drying unevenly during pre-treatment?
Answer: It is necessary to control the ripeness, remove the silk, protect the color, cut thin and spread evenly.
Bananas should be selected from fruits that are 7-8% ripe and have no decay or damage. After peeling, the silk should be removed, and the slice thickness should be controlled at 3-7mm. Bananas are prone to oxidation and browning. After cutting, they should be soaked in a 0.2% -1% citric acid or vitamin C solution for a short period of time to protect the color. After removing and draining, they should be placed on a plate. The tray should be laid flat in a single layer with uniform thickness, avoiding stacking, otherwise problems such as external dryness and internal wetness, inconsistent color, and poor rehydration may occur.
Question 2: Why can't the freeze-drying curve be directly dried at high temperatures?
Answer: Because bananas have high sugar content and strong heat sensitivity, they can collapse, crust, and turn black if heated too quickly.
The pre freezing temperature should be lower than the eutectic point of bananas, usually controlled between -35 ℃ and -45 ℃, to ensure complete freezing of the center. The vacuum degree during the sublimation drying stage is generally controlled at 20-70Pa, and the temperature of the separator slowly increases. The material temperature should be about -22 ℃ lower than the melting point. During the drying stage, the temperature of the partition can be raised to 30-55 ℃, and dehydration can be continued until the moisture content of the finished product is ≤ 5%. If the temperature rises too quickly during the sublimation stage, the surface will first crust and the internal moisture will not be able to come out; If the temperature is too high, it is easy to cause browning and loss of aroma.
Three questions: Why does freeze-drying still cause clumping, discoloration, and a short shelf life?
Answer: Most likely due to uncontrolled humidity in the crushing and packaging environment.
Freeze dried banana slices have a low moisture content and are highly hygroscopic. The temperature in the crushing workshop should be controlled below 25 ℃, and the relative humidity should ideally be below 50%. After crushing, fine powder can be further sieved, but the equipment should generate low heat to avoid moisture regain. The packaging should be quickly completed in an environment with a relative humidity of less than 20% -40%, sealed with aluminum foil bags or composite films filled with nitrogen, with minimal residual oxygen, and stored in a cool and dry place. If the environmental humidity is high and the sealing is not tight, banana powder will quickly absorb moisture, clump, lose flavor, and even exceed microbial limits.
