Pizza IQF tunnel quick freezing and preservation precautions
Analysis has been completed, with a total of 13 references
The core goal of pizza IQF (single unit quick freezing) tunnel quick freezing is to quickly pass through the maximum ice crystal generation zone, protect the bottom tissue, cheese texture, ingredient taste and color, while preventing adhesion, freezing, and moisture loss.
1. Before entering the tunnel: control the moisture, temperature, and ingredient status
table
Precautions for control points
The bottom of the cake should not be too wet. Excessive moisture in sauces and vegetables can cause the bottom of the cake to become soft and sticky after freezing and re baking.
It is recommended to dehydrate or control the water content of high moisture ingredients such as mushrooms, green peppers, pineapples, and tomatoes in advance; Meat ingredients should be cooked or pre processed properly.
Choosing mozzarella cheese is more suitable for frozen pizza, as it has better stretch stability; Cheeses such as cheddar tend to have a grainy texture or oil separation after freezing.
The pizza assembled or pre baked after cooling and freezing time should enter the quick freezing tunnel as soon as possible to avoid prolonged exposure to room temperature and reduce microbial risks.
A small amount of corn flour can be sprinkled on the bottom of the cake for anti adhesion treatment, or baking paper and tray can be used for isolation to prevent the pizza from adhering to the mesh belt and tray.
2. Quick freezing tunnel process: low temperature, strong wind, fast freezing, anti adhesion
table
Suggested control direction for process points
The frozen temperature tunnel should adopt an ultra-low temperature environment, usually recommended to be around -30 ℃ to -35 ℃, to ensure rapid freezing.
Freezing speed IQF emphasizes rapid freezing, minimizing the time it takes for pizza to pass through the maximum ice crystal formation zone and avoiding large ice crystals damaging the dough and ingredient cells.
The wind speed and airflow require strong cold air circulation to quickly crust the pizza surface, reducing water evaporation and surface drying.
Anti sticking pizza belongs to sheet/block products, and it is necessary to prevent cheese, sauce, and adjacent pizza from sticking to the mesh belt or adjacent pizza. This can be controlled through mesh belt vibration, airflow dispersion, isolation paper, and other methods.
After the center temperature exits the tunnel, the center temperature of the pizza should reach -18 ℃ or below, and it cannot be judged that the freezing is complete just by looking at the frost on the surface.
The specific freezing time needs to be adjusted according to the pizza size, thickness, ingredient moisture, mesh belt speed, and tunnel capacity, and cannot simply follow a single fixed time.
3. After exiting the tunnel: packaging, storage, and cold chain must be tightly sealed
table
Precautions for each stage
After packaging is sealed and frozen, the packaging should be sealed as soon as possible to reduce air contact, prevent freezing and burning, cross contamination, and moisture loss.
The inner packaging of packaging materials should use materials that meet the requirements for food contact, and the outer packaging should be sturdy, moisture-proof, and pressure resistant.
The storage temperature for finished products should be maintained at -18 ℃ or below.
Temperature fluctuations during storage and transportation should be controlled within ± 2 ℃. Repeated heating can cause ice crystal recrystallization, affecting the quality of the cake bottom and cheese.
Transportation requirements: Transport vehicles should be clean and odorless, and the temperature of the compartment should be kept below -18 ℃ to avoid mixing with odorous, toxic, and harmful substances.
Avoid repeated freeze-thaw cycles. It is not recommended to thaw or refreeze repeatedly, as it may affect the taste, drawing effect, and food safety.
4. Special precautions for pizza toppings
Cheese: Avoid high-temperature thawing or hot water thawing, otherwise it is easy for oil and water to separate and the texture to deteriorate.
Meat ingredients: Sausage, bacon, beef, etc. should control the fat content and cooking degree to avoid excessive dry wood or oil precipitation after re roasting.
Vegetable ingredients: High moisture ingredients must be controlled for water content, otherwise they may easily release water after freezing, causing the cake bottom to become wet and soft.
Seafood ingredients: There is a high risk of moisture and microorganisms, and stricter temperature and timing control is required.
Thick bottomed pizza: It is more resistant to freezing than thin bottomed pizza, but the difficulty of freezing in the center is higher, and the center temperature needs to be monitored closely.
Thin bottom pizza: It is more prone to dehydration and drying, and the sealing of the packaging and moisture retention during re baking are more critical.
5. Quality judgment criteria
table
Qualified performance indicators
The appearance of the cake bottom is intact, without obvious collapse, cracks, severe frosting or frost burn spots.
After re baking, the cheese should be able to melt normally, with good texture and no obvious serious oil-water separation.
The texture of the bottom of the cake should be crispy on the outside and soft on the inside after re baking, and should not be sticky, damp, or dry like a cake.
There is no sour or rancid smell, halal smell, ammonia smell or other abnormal odors.
The packaging is tight, without damage, air leakage, or obvious frost accumulation.
