Four disadvantages of quick-frozen green beans

1. Loss of Nutrients: The pre-treatment of green beans (such as blanching and washing) before quick-freezing, as well as the prolonged storage process during freezing, can lead to the loss of some nutrients. Scientific research has shown that the pre-freezing treatment steps are the main stage of vitamin C loss, and after six months of commercial frozen storage, the total vitamin C loss rate of green beans can reach 27.6% to 57.9%. In addition, the freezing process itself can also cause a loss of about 20% of nutrients such as reduced ascorbic acid in green beans.
2. Texture and taste deterioration: During the quick-freezing process, ice crystals tend to rupture the cell walls of green beans, causing cell damage. This makes green beans prone to browning, graying, and yellowing after thawing, and their texture becomes loose, soft, and mushy, losing the original fresh, sweet, crisp, and tender taste of fresh green beans.
3. Risk of bacterial contamination: Frozen green beans are highly susceptible to contamination by low-temperature-resistant bacteria during the thawing process. If stored or thawed improperly, the content of bacteria such as Escherichia coli in some frozen green beans may exceed the limit, which can easily irritate the gastrointestinal mucosa and cause gastrointestinal discomfort symptoms such as abdominal distension and diarrhea after consumption.
4. Strict requirements for consumption and storage: Frozen green beans have high requirements for storage conditions. If the temperature in the freezer is not sufficient or the temperature fluctuates due to repeated opening and closing of the door, deterioration is highly likely to occur.3 At the same time, it is not advisable to freeze green beans repeatedly after thawing, as this will further damage the cell structure, leading to frosting on the surface and a deteriorated texture.57 Therefore, it is generally recommended to cook green beans directly without thawing to avoid water release affecting the quality of the dish.
