Three taste issues in the freeze-drying production process of durian
1. Question: Why do some freeze-dried durians not taste crispy enough, and even feel stiff or sticky to the teeth?
Answer: This is usually related to the "free water" content of the raw materials and the temperature control of the freeze-drying process. If the proportion of free water inside durian raw materials (especially rainy season fruits) is too high, it is easy to form large ice crystals during freezing, which can damage the cell structure of the fruit flesh and cause the texture to collapse and become less fluffy after freeze-drying. In addition, during the analysis and drying stage, if the temperature control is improper (too high leads to sugar coking, or too low leads to incomplete moisture removal), it can also cause the finished product to exceed the water content limit (more than 5%), resulting in problems such as sticking teeth and not being crispy.
2. Question: Freeze dried durian melts in the mouth, but sometimes lacks the dense texture of fresh fruit and even has a bitter taste. How can this be improved?
Answer: The decrease in texture is mostly due to insufficient maturity of the raw materials or excessive fiber, resulting in a lack of "creamy texture" in the flesh itself. The bitter taste often stems from the use of unripe fruit pulp or rapid heating during freeze-drying, which leads to excessive local temperature and damages the flavor substances. To improve this problem, it is necessary to strictly screen high-quality fruit pulp with normal maturity and sufficient flavor accumulation (such as gold pillows), and adopt a "flexible freeze-drying program" to ensure uniform dehydration and non cracking of the fruit pulp through precise control of temperature curves and intermittent micro vibrations, maximizing the preservation of its rich and creamy aroma.
3. Question: What is the reason why the aroma of freeze-dried durian becomes lighter after processing and the taste is not soft and sticky enough after rehydration?
Answer: The fading of aroma is usually due to the failure of the freeze dryer to effectively lock in volatile aromatic substances during vacuum pumping, or insufficient accumulation of flavor in the raw materials themselves. To preserve the aroma, precise temperature control is required during the sublimation stage to avoid loss of aroma due to high temperatures. As for the lack of softness and stickiness after rehydration, it is because a sponge like porous structure is formed during the freeze-drying process. If dehydration is excessive or the cell wall is severely damaged during the pre freezing stage, it will not be able to effectively absorb water and expand like a sponge during rehydration. To solve this problem, it is necessary to optimize the pre freezing speed (such as cooling down to -40 ℃ within 30 minutes), so that the ice crystals are small enough to maintain good rehydration and soft texture even after dehydration.
