Precautions for drying dried oranges

2026-09-10

Question 1: Why are dried oranges prone to bitterness, blackening, or being burnt on the outside and wet on the inside?
Answer: This is usually related to improper pre-treatment or excessively high drying temperature. Firstly, before slicing oranges, the seeds must be removed as they are the main source of bitterness. Secondly, excessively high drying temperatures (such as exceeding 80 ℃) can easily cause the surface of orange slices to rapidly char and turn black, while the internal moisture has not yet been drained, resulting in a state of "outer char and inner moisture". The ideal drying method should be low-temperature slow baking, with a temperature controlled between 60 ℃ -80 ℃ to ensure uniform evaporation of moisture and retention of nutrients.
Question 2: What is the impact of slice thickness on the dried finished product and how to grasp it?
Answer: The thickness of the slice directly determines the success rate of drying and the taste of the finished product. If the cutting is too thick, the internal moisture is difficult to completely dry, and the finished product is prone to softening or even mold and deterioration; If cut too thin, it is easy to burn and break during the drying process. It is recommended to cut the orange into evenly thin slices of about 3-5 millimeters, and cut off the thicker skin at both ends before slicing. At the same time, thoroughly clean the surface with saline or baking soda water before slicing to remove fruit wax and pesticide residues.
Question 3: How to determine if dried oranges have been thoroughly dried and how to store them to prevent mold growth?
Answer: The criterion for judgment is to observe the texture and color of the orange slices: thoroughly dried orange slices should have a hard and crisp texture or be flexible and non stick to the hand, with a color of orange yellow or orange brown, and no dampness inside. After drying, the orange slices must be completely cooled at room temperature before being placed in a sealed container and stored in a cool and dry place. If sealed before cooling, the generated water vapor will cause the orange slices to quickly regain moisture and mold.
