Four precautions for drying carrots
When carrots are dried (dehydrated), in order to preserve their color, nutrients (such as beta carotene), and prevent spoilage to the greatest extent possible,
1. Raw material selection and uniformity of cutting
Carrots with smooth, stiff skin, mud and no cracks or insect eyes should be selected as medium thickness carrots, and inferior raw materials that are soft or damaged should be avoided. After cleaning and peeling, it is crucial to cut the thickness. It is recommended to cut it into evenly thin slices or strips of 3-5 millimeters. If cut too thin, it may disappear after drying or the taste may become too dry; Cutting too thick can make it difficult for internal moisture to dissipate. Maintaining consistent thickness ensures that all carrot slices are heated and dried at the same speed.
2. Blanching (withering) pretreatment cannot be omitted
Cut carrots must not be dried directly, they must undergo "withering" treatment. It can be steamed over high heat for 3-5 minutes, or blanched in boiling water with a little salt for 1-2 minutes (followed by rapid supercooling to cool down). This step can effectively destroy the oxidase inside the carrot, prevent oxidation, blackening, and flavor change during the drying process, while shortening the drying time and locking in the natural color.
3. Accurately control the drying temperature and time
The drying temperature should not be too high, and the ideal temperature should be controlled between 52 ℃ -57 ℃ (about 125 ℉ -135 ℉). This temperature range can quickly remove moisture and avoid high temperatures from "roasting" carrots or damaging their nutritional components. The drying time usually takes 6-12 hours, depending on the thickness of the slices and the performance of the equipment. Regular flipping or inspection is required during the drying process to ensure even heating.
4. Thoroughly cool and seal against moisture
The standard for judging the completion of drying is that the dried carrot has a hard and tough texture, can be folded continuously and has elasticity, or can be easily broken. After drying, avoid bagging while it is hot and thoroughly cool it in a cool indoor place. If there is a hot air seal, the generated water vapor will cause moisture regain and mold growth. Finally, it should be stored in a cool and dry place using breathable cotton bags or sealed glass jars, and regularly checked during the rainy season or during the southern season. If necessary, it should be taken out for re drying
