Four disadvantages of quick freezing shrimp

During the rapid freezing process of shrimp, there are indeed some obvious drawbacks due to improper processing, storage, or handling.
1. Ice crystals damage cell structure, leading to a decrease in taste
During the freezing process, the water inside shrimp meat cells will form ice crystals. If the freezing speed is not fast enough (such as regular water freezing), larger ice crystals will form, puncturing the cell structure. This not only causes the shrimp meat to lose its original elasticity and become loose and dry, but also greatly reduces the crispy texture of the shrimp meat.
2. During thawing, the juice is lost and the fresh and sweet taste is weakened
Due to the destruction of cell structure by ice crystals, shrimp will experience a significant loss of cell sap rich in fiber and water during thawing. This not only causes the shrimp meat to shrink, but also takes away the original fresh and sweet flavor of the shrimp, resulting in insufficient freshness after cooking.
3. There is a certain degree of loss of nutrients
Although quick freezing can effectively preserve freshness, oxidation or enzymatic hydrolysis during the freezing process can still lead to the loss of some nutrients in shrimp meat, such as water-soluble vitamins like vitamin C. In addition, each cycle of freezing and thawing exacerbates the degradation of nutrients.
4. The cooking method is limited, and light cooking methods are prone to "overturning"
Due to the lack of freshness, sweetness, and crispness in frozen shrimp, if light cooking methods such as steaming or blanching are used, their shortcomings will be exposed. Therefore, frozen shrimp is usually more suitable for heavy flavor methods such as frying, stir frying, deep frying, grilling, or making sashimi to compensate for the lack of flavor.
