The difference between freeze dryer equipment and drying equipment
Although the ultimate goal of both devices is to "remove moisture", their working principles, processing procedures, and impact on the finished product are vastly different.
Simply put, a freeze dryer is performing subtraction (removing water and retaining mass), while a dryer is performing displacement (hot air and water exchange).
