Spiral freezing equipment and tunnel freezing equipment are widely used in the food processing industry, and they have significant differences in structural design, space utilization, production capacity, and other aspects. Here are the five main differences between the two:
1. Different structure and working principle
The tunnel type quick freezing machine adopts a linear conveyor belt, where food enters from one end, passes through a long tunnel and is cooled by cold air before being output from the other end, forming a flat and elongated shape as a whole. The spiral quick freezing machine adopts a spiral transmission structure, where food is placed on a spiral conveyor belt and moves vertically up or down in the freezing chamber with the rotation of the spiral, thus achieving rapid freezing.
2. Space utilization rate and floor area are different
Due to the use of linear conveying, the tunnel type quick freezing machine requires a long linear space to be reserved, occupies a large area, and has a relatively low equipment height of 5. The spiral freezer, with its vertically stacked spiral design, greatly saves ground space. It occupies a small area but has a high equipment height, making it very suitable for factories with limited ground space.
3. Different production capacity and applicable scale
Tunnel type quick freezing machine is suitable for large-scale and continuous production, especially adept at processing large quantities and single varieties of food (such as meat, aquatic products, etc.), with high cooling efficiency and fast freezing speed. Spiral freezer also has high production capacity, but its advantage lies in flexibility, making it very suitable for handling mixed products (such as frozen bread, pastries, and other different foods), and can maintain good freezing quality without changing the shape of the product.
4. Different protection and freezing effects on food form
Due to the large air volume and extremely fast freezing speed of the tunnel type quick freezing machine, when processing some soft or high moisture foods (such as dumplings, Xiaolongbao), the food surface may deform. The spiral freezer ensures even distribution of cold air to each layer through a horizontal airflow system and monomer rapid freezing (IQF) technology, resulting in a milder freezing process and better preservation of the original shape, texture, and flavor of the food, preventing freezing and burning.
5. The difficulty of equipment maintenance and cleaning varies
The structure of the tunnel type quick freezing machine is relatively simple, and daily maintenance is relatively easy. Some models support an up and down lifting structure for easy cleaning of high-pressure water guns without dead corners. Due to its multi-layered internal structure and complex transmission system, the maintenance of spiral quick freezing machines is relatively cumbersome. However, modern spiral quick freezing machines often adopt open structures, fully welded stainless steel floors, and CIP (in-situ cleaning) automatic cleaning systems, greatly reducing the difficulty of cleaning and maintenance downtime.
