Application of Sichuan pepper freeze-drying and freeze-drying machine in seasoning
Sichuan pepper is a unique seasoning, loved by countless food enthusiasts for its spiciness and numbing sensation. Sichuan pepper, as a common spice and medicinal herb, has a certain spicy taste and aroma, and is commonly used in various dishes in Chinese cuisine. Traditional drying methods may weaken the aroma and numbing taste of Sichuan pepper, while freeze-drying technology can maximize the preservation of the original flavor and nutritional components of Sichuan pepper. This allows freeze-dried Sichuan peppercorns to return to a nearly fresh state when used, maintaining their unique spicy taste. The production of freeze-dried Sichuan peppercorns requires pre-treatment, selecting fresh, mature, and undamaged Sichuan peppercorns, cleaning them thoroughly, removing surface dust and impurities, and rapidly cooling them to around -40 ℃ to freeze the internal moisture into ice. Afterwards, place the Sichuan peppercorns into the drying chamber of the Sichuan peppercorns freeze-drying machine and sublimate them under low temperature and vacuum conditions. Ice crystals can be directly converted into water vapor through sublimation, which can remove water from Sichuan peppercorns without going through the process of liquid water. This not only preserves the shape and nutritional components of Sichuan pepper, but also avoids the destruction of its flavor and nutrition. Finally, seal and package the freeze-dried Sichuan peppercorns to prevent moisture from the air from re entering, which is particularly important for long-term storage. Freeze drying technology ensures the maximum preservation of the nutritional components and unique flavor of Sichuan pepper, while greatly extending its shelf life. Although Sichuan pepper itself has a low moisture content, freeze-drying treatment can further reduce the moisture content, prevent mold and insect infestation, and achieve long-term storage and transportation. Sichuan peppercorns are not only easy to use and store in home kitchens, but also widely used in the catering and health product industries.
