Three precautions for freeze-drying peaches
1. Raw material selection and slicing should be controlled for uniformity
Before processing, peaches that are fully ripe but not too ripe, with tight flesh, should be selected to ensure that the finished product has moderate sweetness and soft flesh. After cleaning, the peach flesh needs to be peeled and pitted, and cut into evenly thin slices of 3-8mm. Slices must have consistent thickness, as excessive thickness can affect dehydration efficiency, while excessive thickness can easily cause fragmentation during freeze-drying, directly affecting the final freeze-drying effect and slice quality.
2. Strictly control temperature and humidity to lock in nutrients and taste
The core of the freeze-drying process lies in precise temperature and humidity control. It is necessary to rapidly form solid ice crystals from the internal moisture of peach flesh at extremely low temperatures (such as -40 ℃ to -45 ℃), followed by sublimation drying in a vacuum environment. The temperature and vacuum degree must be strictly controlled throughout the process to avoid excessive or insufficient drying time. This not only effectively protects thermosensitive substances such as vitamin C (with a nutrient retention rate of over 95%), but also prevents flavor variation, ensuring that freeze-dried peach slices present a crispy and rich taste and bright color.
3. Sealed, moisture-proof and scientifically edible
Due to the removal of moisture from freeze-dried peaches, they have strong hygroscopicity and highly concentrated sugar content. Therefore, the finished product must use packaging materials with good sealing properties and be stored in a cool and dry place, avoiding direct sunlight and high temperature environments to prevent moisture, oxidation, and deterioration. In terms of consumption, it is necessary to strictly control the amount (10-20 grams per serving is recommended), because the sugar and energy content of freeze-dried peaches are several times that of fresh fruits under the same weight. People with diabetes, people with reduced fat, people with weak gastrointestinal function and people with sensitive teeth should be careful to eat to avoid causing blood sugar fluctuations, excessive energy or gastrointestinal discomfort
