Three technical issues for drying mango slices
Q1: Why do mango slices usually need to be blanched or color protected before drying? What impact does this have on the final quality?
A: After peeling and slicing, mango flesh is prone to enzymatic browning when exposed to air, resulting in a dark color and poor appearance of the dried product. Therefore, in industry, hot water at 95-100 ℃ is usually used for 3-5 minutes of blanching treatment to disrupt enzyme activity, followed by rapid cooling with cold water; Alternatively, soak in lemon water or low concentration sulfite solution for color protection. These pretreatment methods not only effectively prevent mango slices from oxidizing and discoloring, but also moderately soften the flesh tissue, accelerate the migration of moisture during the drying process, and thus improve the color and appearance quality of the finished product. Q2: What are the strict requirements for temperature and humidity when drying mango slices? How to design temperature control curves for equipment to prevent "surface crust"?
A: Mango is rich in sugar, and high temperatures can easily cause surface sugar to char and crust, thereby hindering the evaporation of internal water. Therefore, the equipment must adopt a multi-stage step temperature control process: firstly, low-temperature preheating (35-40 ℃, 1-2 hours) is carried out to slowly heat up the fruit pulp and promote the migration of internal moisture to the surface; Subsequently, it enters the medium temperature dehydration stage (45~50 ℃), during which the fan speed needs to be increased and a dehumidification device needs to be used to control the humidity in the drying room at 40%~50% to accelerate water evaporation; Finally, slow down drying (55-60 ℃) is performed to further remove deep moisture. This precise temperature and humidity coupling control can effectively avoid the phenomenon of external dryness and internal humidity. Q3: After drying, mango slices have a harder texture and are prone to moisture regain. What technical means are available on the equipment side to optimize taste and extend shelf life?
A: Newly dried mango slices often have a hard texture and uneven moisture inside and outside, so they need to undergo a "softening treatment" - sealing and placing them for 1-2 days to allow residual moisture inside to redistribute and make the texture soft and resilient. In order to achieve the desired soft and sticky texture and extend the shelf life, it is usually necessary to perform a second low-temperature drying (50-55 ℃) to accurately control the moisture content of the finished product between 18% and 22%. In addition, in the packaging process, the equipment should use vacuum packaging or inert gas filling technology, combined with food grade moisture-proof and oxygen blocking materials, to completely isolate oxygen and moisture, and prevent mango slices from absorbing moisture or oxidizing during storage.
