A1: Focus on freezing speed, energy efficiency ratio, and ease of cleaning of equipment. Firstly, the equipment must have extremely fast cooling capability to ensure that the fruit can quickly pass through the "maximum ice crystal formation zone" of -1 ℃ to -5 ℃ within 20 minutes, thereby forming tiny ice crystals with a diameter less than 100 μ m to avoid damaging the cell structure; Secondly, the insulation performance of the equipment and the refrigeration system (such as high-efficiency evaporators and low-noise fans) should be examined to reduce the energy consumption cost of long-term operation; Finally, due to the high sugar and acidic content of fruits, the equipment must be made of food grade stainless steel material, and the internal structure (such as mesh belts and air ducts) must be easy to disassemble and clean to prevent bacterial growth and cross contamination.
Q2: How to prevent fruit from sticking or clumping when using fluidized bed IQF equipment?
A2: The key is to control the surface moisture and feeding method before freezing. Before entering the freezer, fruits must undergo strict dehydration treatment (such as using air knives or centrifugal dehydrators) to ensure that the residual moisture on the surface does not exceed 2%. This is the core prerequisite for preventing the formation of ice bridges and adhesion during freezing. At the same time, it is recommended to use a vibrating fabric feeder for the feeding conveyor belt to evenly and evenly feed the fruits into the freezing zone, avoiding accumulation; In addition, it is necessary to adjust the wind speed of the cold air from bottom to top reasonably, so that the fruits appear in a slight "suspended" rolling state on the mesh belt, ensuring that the cold air wraps around every fruit without dead corners.
Q3: How should daily monitoring and maintenance be carried out during equipment operation to ensure quality?
A3: It is necessary to closely monitor the core temperature parameters and regularly clean key components. The operator should monitor the temperature in the frozen area (usually maintained at -30 ℃ to -40 ℃) and the speed of the conveyor belt in real time through the control panel to ensure that the center temperature of the fruit reaches below -18 ℃. At the same time, it is necessary to regularly check whether the defrosting system is working properly to prevent excessive frosting on the surface of the evaporator from causing a decrease in refrigeration efficiency. In terms of hygiene maintenance, it is necessary to thoroughly clean the collection tray and drainage system at the bottom of the warehouse after each production to prevent water accumulation from freezing or deteriorating, thereby ensuring the stable operation of equipment and food safety.
