What is the difference between freeze-dried strawberries and regular dried strawberries?
Answer: The biggest difference lies in the processing technology. Ordinary dried strawberries are usually dried with hot air or dehydrated with sugar stains, which can damage the cell structure of strawberries, resulting in darker color, harder texture, or more tough texture. And strawberry freeze-drying is carried out in a vacuum low-temperature environment, allowing the moisture inside the strawberry to sublime directly from the solid state to the gas state. Therefore, freeze-dried strawberries can perfectly preserve the fresh red color and complete shape of fresh fruits, and have an extremely crispy taste.
Will the nutritional value of freeze-dried strawberries be lost?
Answer: No. Because the freeze-drying process is carried out at low temperatures, the heat-resistant vitamins (such as vitamin C), antioxidants (such as anthocyanins), and dietary fiber in strawberries can be maximally preserved. It is almost equivalent to draining the moisture of fresh strawberries, and the nutrient density becomes higher due to dehydration.a
Why does it taste so crispy but without any moisture inside?
Answer: During the sublimation process, water will leave countless tiny sponge like pores inside strawberries. It is these pores that make strawberry freeze-drying extremely lightweight and melt in the mouth. At the same time, this porous structure also endows it with strong water absorption, so if it is soaked in milk or yogurt, it will quickly absorb water and restore a soft and sticky taste similar to fresh strawberries.
What special precautions should be taken when consuming or storing in daily life?
Answer: The most important things to pay attention to are "moisture-proof" and "quantity control". Strawberries are highly hygroscopic when freeze-dried, and once exposed to air, they quickly soften and lose their crispness. Therefore, they must be sealed and stored immediately after opening. In addition, due to the high concentration of sugar after removing moisture, strawberries have much higher calories and sugar content than fresh strawberries under the same weight. It is recommended to only grab a small handful (about 10-15 grams) each time to satisfy cravings and avoid excessive sugar intake.
